Butter Tarts

Set oven to 375 degrees F.
Bake time 20 to 25 minutes

Pour boiling water over 1 cup of raisins -- put aside

In medium bowl cream 1/2 cup butter
Add 1 1/2 cups of brown sugar -- mix well
Add 1 teaspoon of salt {optional},
2 beaten eggs,
1 teaspoon vanilla,
1 teaspoon lemon juice.
Mix well.
Add drained raisins -- fold in.
Fold in 1/2 cup currents {optional}
Fold in 1/2 cup chopped unsalted nuts {optional}
Fill uncooked pastry shells 2/3 full
This recipe will make at least 24 mini tarts.
