Pudding Style Cake


Set oven at 350 deg. F.
In a 3quart casserole dish - mix together 3 cups of rhubarb or mixed fruit (berries, apples) with about 1/2 cup sugar
In separate bowl mix together - 1 1/4 Cups all purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup white sugar 1 egg 1 teaspoon vanilla 2/3 cup milk
Pour or spread over fruit.
Bake for 45 to 55 minutes or til toothpick comes out clean.

Lemon Sauce

In small sauce pan mix together -
6 tablespoons sugar 2 tablespoons flour 1 teaspoon lemon rind pinch salt 1 cup boiling water 2 tablespoons butter 2 tablespoons lemon juice

Heat til thick. Serve warm over warm Pudding Cake
