I make these cookies about a month before Xmas
and keep them in a cookie tin to season
2 Cups butter---- cream well
Add 1 cup of brown sugar - cream til well mixed
Add 4 1/2 cups of flour -- 1/4 at a time mixing well by hand after each addition
Turn out onto a lightly floured surface, roll out to 1/4 inch thickness
Cut into squares, use cookie cutter shapes, or press into a shortbread mold.
Set oven at 275 degrees F. -- bake on ungreased cookie sheets for 30 to 40 minutes or till light golden colour.
