Walnut Bread

3 cups flour 1 beaten egg
1 cup sugar 1/4 cup soft lard
4 teaspoons baking powder 1 1/2 cups milk
1 1/2 teaspoons salt 1 teaspoon vanilla
1 1/2 cups chopped walnuts

Resift flour with sugar, baking powder and salt into mixing bowl. Stir in 1 1/4 cups of the walnuts. Add egg, lard, milk and vanilla. Mix til just blended. Turn into greased and floured (or lined with foil) loaf pan (9x5x3). Sprinkle remaining nuts on top.
Bake at 350 deg.F. for 60 to 70 minutes or til toothpick comes out clean.
Let loaf stand in pan 10 minutes. Turn out to cool.

For variety I will add to the mix 1/2 cup raisins or currants. I will also split the batter into two pans and shorten the baking time to about 45 minutes (checking for doneness, bake longer if necessary).
